Banana bread

 Here’s a fool proof recipe for banana bread, the one I have tried many many times. This recipe is from one of my favorite blogs for baking(link given below).


Bread comes out super moist and you can hardly tell any difference between this and the store bought ones. I have used milk and butter in this recipe, however the original recipe is for vegan banana bread[with suggestions for substitutions].

Pav bread

 Making Pav bread from scratch for pav bhaji or vada pav is a tedious process compared to the convenience of buying it from stores. But let me point out the advantages - by making it at home, you can go as healthy as you like. Like instead of adding all maida, I made it half maida and half wheat flour. These taste extremely fresh. The short shelf life of homemade(fresh) stuff makes you wonder the the kind of preservatives that are added to the store bought stuff to keep them fresh for more than 2 weeks, sometimes even a month!!!!





And for convenience sake, you can always make it a day before. Lastly the house smells divine after baking bread!

Puff palya - stuffing for puff pastry

My goto stuffing for puff or sandwich had mostly potatoes and then some vegetables + masala powders. And I would avoid cabbage(and it’s family). And because there was lot of potatoes, masalas would lose flavor by the end of the day.


This stuffing happened by chance. One time while making palya for puff, since I didn’t have enough potatoes, I added cabbage. This turned out exactly like Bangalore Iyengar bakery style puff. Cabbage not only complimented all masala powders very nicely but made it taste more like Indo Chinese.  Super happy with this accidental discovery..

Eggless Marble Cake

 Whew! What a year it has been! What a contrast between beginning of the year to end of the year! Who knew at this time and age a small virus can still have a potential to disrupt the whole world. One can only pray. Stay safe everybody!

Dabeli

Dabeli is a popular street food. It is basically spicy potato mix placed in-between pav bread..  



This recipe is from Manjula’s kitchen.  I was really intrigued by the way the dabeli stuffing was cooked. Basically the potato is boiled and cooked in water along with dabeli masala, so that it comes to a paste consistency! Never knew potato could do that. This spicy potato paste is then placed in between roasted pav bread smeared with green/garlic and sweet chutney, and then topped with some sweet(pomegranate seeds) and spicy sev... yum yum..

Eggless Chocolate Cake



Summer Vacations are here!!! *a meek yay*
I love my daughter and all, but let me be honest - entertaining a kid at home is no child's play!!! I am at the end of my tether. She treats me like her play date.. and I get bored after a long play of 1 min! what to dooo?!! 

Thankfully, her summer school is starting soon! Both mother, daughter are eagerly waiting for it :)

To keep her busy, I’ve been cooking with her in the kitchen.. 
Result = Madam wants to cook something special every day! 

I am a big fan of Archana’s kitchen.. She has some very detailed videos of her recipes. I’ve never tried her recipes before, but plan to do so in the future. 

Anyways, I was watching one of her videos on Eggless Chocolate Cake, when my daughter saw it and wanted to make it(now that she thinks cooking is easy!). The recipe uses flax meal as egg replacement. I have been wanting to try flax meal as an egg replacement for a long time now, but was too skeptical to experiment. But in this video there was a pretty good explanation, which made me confident.


Since I had flax meal on hand, we started getting ready to bake.
Only after we started, I realized that all the measurements were in grams!! I am only used to measurements in cups. I looked for a converter online, but the results seemed bizarre. 
Now those who have experienced it know, what it is to back out of a promise from a little kid! So not wanting to face that, I kind of assumed the measurements and went ahead with the cake, keeping my fingers crossed. Thankfully, the cake turned out moist and good. It was little low on sweet, which suited my taste. My daughter didn’t seem to like it so much initially, but liked them more the next day.

Benne Biscuit/ Butter Cookies


It was time of the season again for the function at my daughter’s school. Again, I signed up for dessert for the potluck. After gaining confidence from last time, I decided to bake “benne biscuit” this time.. 

More than that, there was another reason why I wanted to try this particular recipe. I soooo wanted to put it up here for such a long time now. I was just looking for an excuse to make it. You see, this was the first thing I ever baked! I was not even into browsing through food blogs then... this was the recipe that got me hooked onto food blogs(and eventually onto cooking, for that matter).. this is a very special recipe to me. If at all I receive any award for food blogging, I would mention "this is how it all started..." in my thank you speech - that kinda special :D 


Benne bisuit has always been my favorite bakery item. This one doesn’t exactly taste like the ones available in India. This recipe uses ghee. Apparently, they use dalda in India to get that soft, powdery texture.


These cookies taste more like butter cookies. They have a crunch in them.


The procedure is fairly easy and it is a great item to take for a potluck.
