Here’s a fool proof recipe for banana bread, the one I have tried many many times. This recipe is from one of my favorite blogs for baking(link given below).
Bread comes out super moist and you can hardly tell any difference between this and the store bought ones. I have used milk and butter in this recipe, however the original recipe is for vegan banana bread[with suggestions for substitutions].

Ingredients
Dry Ingredients
All purpose flour - 2 cups
Baking powder - 1.5 tsp
Baking Soda - 1/2 tsp
Salt - 1/2 tsp
Wet Ingredients
Banana - ripe - 2-3
Sugar - 1 cup
Butter(or oil - for Vegan option) - 1/3 cup
Milk(or almond milk - for Vegan option) - 1/4 cup
Vanilla essence - 1 tsp
Walnuts - chopped - 1/2 cup
Method
Step 1
Sieve flour, baking powder, baking soda and salt
OR(do what I did)
- in a mixing bowl, add all these and whisk until everything mixes. Save around a tsp of flour for walnuts.
Step 2
Mash banana nicely in a different mixing bowl with a spoon, then add Sugar, Oil/butter), milk, vanilla essence and beat with a beater until everything mixes properly.
OR
(do what I did :) ) -
In a mixie, add roughly chopped banana, pulse couple times, then add remaining wet ingredients, pulse again. Take it out in a mixing bowl.
Step 3
Add dry ingredients to the wet ingredient in 2 batches. Mix well. Do not over mix.
Coat chopped walnuts with a tsp of flour. Mix well. Add this to the batter and fold it using a spatula.
Step 4
Preheat oven @350 F.
Grease loaf pan with butter/oil. Add the batter. Tap the pan gently couple times to take out air bubbles. [Note to myself - remember to do this :)]
Bake for 60-70 min until done(Insert a a tooth pick/ skewer in the middle, it should come out clean).
Step 5
Allow it to cool on a wire rack. After it’s completely cooled down, cut into slices. Enjoy with some hot coffee!!
