Enjoy these wonderful tutti frutti cookies(Karachi biscuits) this holiday season!

Ingredients (enough for 25 cookies)
All purpose flour/Maida - 3/4 cup
Custard powder - 1/4 cup
Cashew powder(I used almond flour) - 1/4 cup
Baking powder - 1/2 tsp
Tutti frutti - 1/2 cup
Cardamom powder - 1/2 tsp
Orange Zest - of 1 medium orange
Salt - pinch(don’t skip)
Powdered Sugar - 1/2 cup
Butter - 1/2 cup - room temperature
Pineapple essence(or Rose essence) - 1/2 tsp (few drops)
Method
In a bowl mix together maida, custard powder, cashew powder and baking powder.
In a different mixing bowl beat room temperature butter and sugar, until it is mixed together and is creamy(3-4 min). Add essence, cardamom powder and orange zest and mix well.
Add mixed-flour and tutti frutti in batches and mix with a spatula, until everything comes together. Do not knead. Just mix and form a dough. Shape it in the form of a log and then shape it to become a rectangle. Cover it with a cling wrap and keep it in the refrigerator for 2 hrs.
Take them out, remove the cling wrap and cut them in 1/4 inch pieces. Spread them out evenly on a baking sheet and bake @350 F for 12-15 min, until the edge and bottom turns light brown. Take them out of the oven and allow them to cool completely. They are soft initially, but harden once cooled down. Enjoy!

Notes -
- Use only powdered sugar. The texture will be different if you use plain sugar. So run it in the mixie if you don’t have it handy.
- Do not skip salt, as it will bring out flavors.
- Use room temperature butter. Do not melt it in the microwave.
