Congress Kadlekaayi

 Never knew congress kadle kayi was sooooo sooooo very easy to make at home. Here I was, waiting for my India trips to savor these delicacies. You can make it even more easy by bringing de-skinned peanuts. Enjoy with some hot coffee.





Ingredients


De-skinned peanuts


Oil - around a tbsp or so - preferably peanut oil 

Turmeric

Red chili powder

Black pepper powder

Hing 

Sugar powder - chk notes

Salt

Curry leaves


Method

Roast peanuts in medium flame, either on stove top or in microwave. If you want to do it in microwave, take a microwave safe plate. Spread peanuts. Roast in increments of 1 min. Toss and mix every minute. If sautéing in a pan, make sure you roast them in medium flame, and they don’t get burnt. 


If peanuts are not de-skinned, rub them between you palms. Skin comes off easily. Chk notes for tips on separating skin. 


Halve them by pressing gently. 


In a pan, add oil. Set the stove to low-medium heat. Add all the ingredients(except powdered sugar). Sauté for a minute or so, just to make sure that the powders are not raw, and curry leaves become crunchy and moisture-free. Make sure the powders don’t burn. Add peanuts. Add powdered sugar now. Give it a good mix. Off the stove. Let it cool down. Mix with hands thoroughly until peanuts are well coated with masala, and curry leaves are powdered and coat the peanuts nicely. Enjoy as it is, or in kadle puri/ mandakki/ murmura.

Notes - 

  • BUY DE-SKINNED PEANUTS - your life becomes easy - Archana, thanks again for this life saving tip :))
  • Less oil is enough. I added too much.
  • DO NOT SKIP SUGAR.
  • To separate skin from the peanuts - After roasting and rubbing them in between your hands, take them in a plate with rim(or a sauté pan) and toss them like “jaradi hidiyodu” (in such a way that you make the peanuts toss from the side of the plate making sure it falls back inside the plate again - like how chefs toss food in a pan while sautéing). All peanut skin goes to a side. You can take them off easily.
