Enjoy this holiday season with freshly baked Tutti frutti cake.
The cake turned out super moist and tasty despite no egg. Very easy to make. Enjoy!
Ingredients
All purpose flour - 1.5 cups(liquid measuring cup)
Curd - 1 cup
Sugar - 1 cup
Oil - 1/2 cup(or butter)
Tutti frutti - 1/2 cup
Raisins - 2 tbsp(optional)
Vanilla extract - 1 tsp
Baking soda - 1/2 tsp
Baking powder - 1 and 1/2 tsp
Salt - 1/4 tsp
Method
Preheat oven at 350 F(180 C)
In a mixing bowl beat curd, sugar baking soda and baking powder with a whisk. Leave it aside for 5 min. Meanwhile mix tutti frutti(and raisins) with a tsp of flour.
Add vanilla essence + oil + salt to the curd mix in the mixing bowl.
Add flour part by part. Mix well. Add tutti frutti, mix well. Add this to a greased bread pan. Level the top and tap the pan couple of times to release air bubble. Bake for 50 - 55 min, or until done. A tooth pick inserted in the middle should come out clean. Take it out on a cooling rack. Let it cool for at least 30 min. Cut them in slices.
