Coconut Milk Pulav

 One of the very simple yet rich tasting pulavs I fell in love with instantly when I tasted it at my friends place. InstaPot makes it even more simple. Do try!




Ingredients

Coconut oil/ Ghee - 2 tbsp

Cashews - 5-6

Onion - cut lengthwise 

Ginger-garlic paste

Green chilies - 3-4 

Curry leaves

Basmati rice - 1 cup

Coconut milk + water - in equal proportions - total 1 and half cups

Salt 


Whole spices

Cinnamon

Cloves

Cardamom 

Bay leaf


Mint

Cilantro 


Vegetables 

Carrot

Beans

Capsicum 

Peas

Cauliflower(chk notes)


Method


Turn on InstaPot in sauté mode. Add ghee(recipe says coconut oil), add whole spices(cinnamon, bay leaf, cloves, cardamom) + cashews + onion + green chilies + gg paste + vegetables + curry leaves - sauté as you add each ingredient. 

Add mint + cilantro + thin coconut milk(1:1 almost) - bring it to a boil. 

Add soaked basmati rice + salt - give it a good mix. 

Turn off sauté mode and cook in rice mode.

Notes -

  • If pressure cooking, cook for 1 or 2 whistles.
  • Cauliflower doesn’t pressure cook well. So if pressure cooking, skip cauliflower
  • You can also do this directly on stove top. Use a thick bottom pot and cover and cook. 
  • I used canned coconut milk. Do not add thick coconut milk, I did this mistake first time and the dish was extremely greasy and heavy. 
  • You can skip onion and ginger-garlic paste, it’ll still turn out good but simple tasting.
