Easy Sabudana-Chia seeds Dessert

Want to start this year with a sweet note, try this easy peasy Sabbakki dessert. It’s basically fruit custard, made slightly differently. You can prepare this well in advance, making it a perfect potluck dessert. Addition of Sabbakki and chia seeds gives a nice contrasting texture to the dessert. Enjoy! 





Ingredients (for 6-8 servings)

Milk - 1.5 cup

Sugar - 1/3 cup

Milk powder - 1/4 cup

Sabudana - 1/4 cup

Basil seed - 1 tbsp(I used chia seeds as I didn’t have basil seeds)

Vanilla essence - 1 generous pinch

Nuts - as needed(I added sliced almonds and cashews)


Fruits - 

Grapes(green and black for beautiful color)

Banana

Apple

Mango

Strawberry

Cherry(sweetened)  


Method


In a pot add milk + sugar + milk powder and let it boil in medium flame for 7-8 min. Keep stirring while boiling as it can burn at the bottom. Off the stove and let it cool down completely. Even while cooling down, don’t forget to mix it on and off to prevent formation of cream layer. 

Refrigerate for at least an hour. 

Meanwhile soak sabudana for half an hour. Boil it in water till they become transparent. After done, strain the water and wash with cold water to take away excess starch. 

Soak basil seeds(or chia seeds) in water for 10 min. 


Now add sabudana, basil seeds, vanilla essence, sliced nuts, chopped fruits and mix well. Serve chilled.
