Just like pulav, I am struggling to get that THE flavor of fried rice that’s available in Indo Chinese restaurants. Every time I see a recipe with slightest difference than what I’ve tried before, I try again.
So did this particular recipe pass my taste test? It kinda did, but not 100%. But to be fair, this is supposed to be street style fried rice(which I’ve never tasted), not restaurant style, and also I didn’t stick to the recipe 100%. This recipe is very close to what I want to achieve. This gives me a good base to work upon.

Ingredients
Basmati Rice - 2 cups
Veggies
Carrot - 2 large
Beans - 8-10 (handful)
Bell pepper - 2
Cabbage - 1/4 (optional)
Celery - 2 sticks (optional)
Coriander leaves- 1 tbsp
Spring onion - 1/4 cup
Ginger - 1/2 inch
Garlic - 2-4
Green chili - 2
Green chili sauce - 2 tsp (to taste)
Dark Soy sauce - 1 tbsp
Vinegar - 1 and 1/2 tsp
Salt
White Pepper powder - 1/2 tsp(black pepper can also be used if white is not available)
Sugar - 1/2 tsp
Oil - 1-2 tbsp
Method
Soak rice in water for 10-20 min. Pressure cook rice with 1 to 1 and 1/2 water for 1 whistle. After cooking, fluff it with a fork and add some oil to help keep the grains separate. Let it cool down completely.
Meanwhile chop veggies into small pieces.
Chop ginger, garlic, green chili finely.
In a wok or any thin deep dish, add sufficient oil, add finely chopped ginger(3/4th of total), garlic and green chili(3/4th of total). Sauté. Add carrots, salt(very less) and sugar. Soy sauce. Sauté till carrots are almost done. Soy sauce should sauté nicely. Add cooked rice. Add remaining green chili + ginger. Add green bell pepper and green beans. Sauté. Add vinegar, green chili sauce(if adding), white pepper powder. Mix nicely. Sauté. Garnish with spring onion and cilantro. Mix. Serve.
