This recipe is from one of the first blogs I stumbled upon, many many many years back.
I’ll be honest, ordering this from a restaurant is much, much, much easier than making it at home. Frying gobi takes FOREVER!! If not for this step, everything else is manageable. I wanted to invest in an air fryer just for this purpose alone. Never got to it though. Anyways, here’s the recipe.

Ingredients
Gobi/ Cauliflower
Onion - 1 medium
Bell pepper - 1
Scallions - 1 bunch
Green chili - 2
Ginger-garlic paste - 1 tsp
Oil for frying
Soya sauce
Tomato ketchup
Red chili sauce
Corn flour - 1 tsp
For the batter
Maida - 1 cup
Corn flour - 1/2 cup
GG paste - 1/2 tsp
Red chili powder - 1 tsp(according to taste)
Salt
Method
Prep veggies -
Chop cauliflower into florets. Wash them thoroughly. Boil them in water for a min or 2 - they just have to become little soft. Take them out on time and drain water completely. Keep them aside.
Chop onion finely or cut them into bite size pieces - according to your preference.
Chop bell pepper into bite size pieces.
Chop spring onions into small pieces. Separate white part and green part.
Chop green chili finely.
Make batter -
Mix maida, corn flour, red chili powder, gg paste and salt in a mixing bowl. Add water and make it into a thick paste.
Make gobi pakodas -
Dip cauliflower in the batter, coat evenly and then deep fry in hot oil. Now this is a lengthy process. It takes forever to fry. I did double frying to get the crispy texture. This is how - once the ‘pakodas’ are semi done, take them out. Then do one more batch similarly. Now deep fry first batch again - completely this time. This technique makes the pakodas crunchy.
Make slurry - mix a tsp of corn flour with water to make a watery paste.
In a hot deep pan, add some oil. Add gg paste, green chilies, add onions and bell pepper. Sauté till they are crunchy. Add white part of the scallions. Add all the sauces. Add little salt as there’s already soya sauce. Add corn flour slurry. Let it come to a rolling boil. Add fried gobis and give it a quick mix.
Garnish with green part of the scallions. Enjoy!
