Presenting another flavorful rice bath made with methi leaves - methi pulav. Very easy, very tasty and very healthy. This can be made in 1 pot too. Here’s another recipe for methi leaves rice bath.

Ingredients
Rice - Sona masoori - 1 cup
Water - 2 cups or less (rice shouldn’t be mushed, add accordingly)
Dried peas - soaked overnight or fresh peas.
Methi leaves - 1 big bunch
Onion - 1 big
Tomato - 2 big
Jeera
Bay leaf - 1
Star anise
Turmeric powder
Oil/ ghee
To grind
Cinnamon - 1 big piece
Cloves - 7-8
Elachi - 1
Coriander seeds - 1 tsp
Fennel seeds - 1/2 tsp
Ginger - a big pieces
Garlic - 2
Green chili - 4
Coconut - 1/4 to 1/2 cup
Cilantro - a big bunch
Mint leaves - little less than cilantro
Method
Grind “to-grind” ingredients. In a pressure cooker add rice, water, peas(if using dried peas), if using frozen peas add while making masala), salt and bay leaf. Cook for 2 whistles.
Original recipe is a 1 pot recipe where in you fry ground masala and then add rice and cook it in the same pot. However I personally prefer prepping masala in a different pan and then mixing it with cooked rice later on.. this way masala will retain more flavor.
In a deep pan, add oil + ghee + jeera + star anise. When jeera sizzles, add onion. When it is about to turn translucent, add tomatoes and thoroughly washed and finely chopped methi leaves. Cover and cook till everything is almost cooked. Add ground masala + salt + turmeric and cook in medium flame until oil separates. Add cooked rice. Mix well. Adjust salt if necessary. Server hot with your favorite raita.
