Dabeli is basically pav buns stuffed with spicy potato masala. Very tasty chat item, which enlivens your taste buds with sweet, spicy, garlic, sev, nuts, crunchiness of fruits and whatnot.
Recently tried this Dabeli with a mix of different powders for Dabeli Masala(link given below). I have another recipe for Dabeli which makes dabeli masala from scratch. It can be found here.

Ingredients(enough for 30 - 35 dabelis)
Pav bread
Butter
Potato - 6-8 medium to large size
Oil
Pomegranate - 8oz deseeded box
Onion - 1 large
Roasted peanuts - (I used store bought masala peanuts)
Coriander leaves
Salt
Coconut(skipped this)
Garlic chutney(Chk notes for my easy version of garlic chutney)
Sweet chutney(Chk notes)
Sev
Dabeli Masala(for the above quantity of potatoes, double this quantity)
Chat masala - 1 tbsp
Garam masala - 1 tbsp
Red chili powder - 1 tbsp
Turmeric - 1/2 tsp
Method
Pressure cook potatoes with enough water. Either peel them before cooking or after cooking. Mash them nicely. It’s fine if it’s pasty. Keep it aside.
In a pot, add oil, add dabeli masala powders, sauté in low flame(make sure not to burn them)add mashed potatoes, salt and mix well. Instead of adding tamarind chutney to the bread, I added tamarind and some jaggery to this masala itself.
Mash potatoes to a smooth paste. Add water if necessary. It is okay if the mixture is watery at this point. The more you heat and mix it, the more it’s going to get incorporated and comes together. Also this masala hardens up as it cools down.
Transfer it to a plate, Spread finely chopped onion on top of this, then finely chopped cilantro, roasted peanuts, pomegranate seeds and shredded coconut. Press them gently into the masala.
Cut pav from the corner into the middle, but not all the way through, making a pocket to stuff the filling. Add garlic chutney(and sweet chutney if adding). Add a tablespoon or two of the stuffing, making sure it’s nicely stuffed. Toast in a pan with butter. Roll the sides on sev. Enjoy!

Notes -
- Here’s my goto easy garlic chutney recipe - In a bowl mix garlic salt and red chili powder. Add water to bring it to chutney consistency.
- Since I didn’t have sweet chutney handy, I replaced it with tamarind(4tsp)+jaggery(4tsp) and added this to dabeli masala itself.
