Making Indian sweets/ barfis is always a daunting task for me. Bringing sakkare paaka(sugar syrup) to one string consistency is where I get stuck mostly.
Thanks to my friend Anusha, I got this recipe which uses InstaPot to make sugar syrup. She shared it along with some yummy katlis, which gave me more confidence to try them myself.
I remember my other friend’s words here that more the gadgets you use in the kitchen, less is the skill required :)

I’m not complaining. This recipe is so easy and fool proof and it turned out extremely good. Make syrup in InstaPot, mix almond flour from Costco, let it cool and done!
You can make this for any festival/potluck without breaking a sweat.

Ingredients
Sugar - 1 cup
Water - 1/4 cup + 2 tbsp(in measuring spoon and not in liquid measuring cup)
Ghee - 1 tbsp
Almond Flour - 2 cups
Cardamom - a generous pinch(not in the original recipe)
Method
This method is for 6qt InstaPot(Do click the link below for more tips from the blogger).
Add sugar + water in the InstaPot. Give it a good mix. Cook on manual, high pressure for 10 mins. (Carefully) Quick release. Add ghee, almond flour, and cardamom powder. Mix till the mixture comes together and is not sticking to the sides. Note that InstaPot is OFF at this point.
Transfer contents to a greased plate/ greased parchment paper. Put another parchment paper on top and flatten it neatly. You can also use rolling pin for this purpose. Let it cool for at least 10 min and cut in required shape. Let it cool down completely. Enjoy!

- Above quantity makes around 20 good shaped katlis
