Masala Puri - 2

 Want some masala puri? 





This recipe is very similar to the first recipe of masala puri recipe I posted long time back(which can be found here). But there is little change in the procedure and masala. Instead of using raw ingredients for grinding, you sauté and then grind. Very small thing, but I loved subtle difference in the taste. I also liked the usage of pav bhaji masala here(It is my goto masala for many dishes these days). This one too, like the previous recipe, tasted restaurant quality.

Ingredients (makes 5 lt ragda)


Puris - as needed


Dry peas - 2 cups

Potato - 2

Carrot - 1


Onion - 1 big (1/2 for sautéing + 1/2 for garnishing)

Tomato - 2

Garlic - 4

Mint - handful

Cilantro - handful

Green chilies - 4

Ginger - 1 inch

Tamarind - 2 tbsp 

Jaggery - 2 tbsp


Powders(adjust accordingly to taste)

Pav bhaji masala - 2 heaped tsp

Garam masala - 1 tsp(less if it’s very strong)

Red chili powder - 1 tsp

Chat masala - 1 tsp

Black salt - 1/4 tsp (according to taste)(not in the original)

Turmeric - 1/4 tsp


Garnish

Onion - finely chopped

Tomato - finely chopped

Carrot - grated

Cilantro - finely chopped

Thin sev(or bhel mix)

Sweet chutney - optional

Green chutney - optional 


Method

Soak dry peas overnight. Pressure cook peas + peeled and cubed potato + cubed carrot for 3 whistles. After pressure comes down, mash potatoes and carrots and peas. 


Meanwhile sauté 1/2 cubed onion, tomato, green chili and garlic and ginger till everything cooks, for couple of minutes. Add mint and cilantro. Let the greens not wilt completely. Grind this to a smooth paste along with some peas, little potato and carrot all powders and salt. 


On the stove and add ground paste in a pot. Let it come to a rolling boil. Adjust water to come to gravy consistency and  boil everything nicely for some time. Note that gravy thickens as it boils and after it cools down. Add water accordingly.  


Serve

In a plate, crush some puris(or bhel mix). Add gravy(ragda), garnish with garnishing items. Enjoy!
