Aloo-Gajar-Matar Sabzi

Generally when you make North Indian dals or curries like chana/ rajma, you need a vegetable accompaniment to make it a complete meal. South Indian style sabzis(palyas) don’t go well with this theme, you need north Indian style sabzis. Aloo-gajar-matar fits the bill perfectly. My cousin Archana suggested me to try this particular recipe for its simple taste and easy execution. There is actually no masala in this except for tadka + ginger + green chilies, but this is sufficient to bring out all the vegetable flavors in the dish. My daughter just loved this and kept asking for more and more.

Ingredients

Potato - 4 medium 

Carrot - 4 

Peas - handful 

Green chili - 4 - finely chopped

Ginger - a big piece - finely chopped 

Cilantro 

Jeera - 1 tsp

Hing

Salt

Oil 


Method

Cut potatoes and carrots into bite size pieces. In a pot add oil + jeera. After it sizzles, add hing and finely chopped green chilies and ginger. Sauté it for a minute. If cooking in pressure cooker, add potatoes, carrots and peas. Add very little water, like a tsp or two. Add salt. Give it a good mix. Cook for 1 whistle. 


I did it on stovetop(*see notes). So after making tadka, add carrots first. Cover the lid. Let it cook for few minutes until they become little soft. Mix once in a while. Now add potatoes and peas. Add salt. Add little water(like a tsp at a time) so that potatoes don’t stick to the bottom and also keep mixing them once in a while. Cover and cook till all vegetables are cooked properly. Garnish with cilantro. Eat it with chapathi/ rice and dal. Enjoy!

Notes - 

  • I think a pinch of garam masala powder would also enhance the flavor. 
  • Pressure cooking did not work for me as everything got mashed up. I did it on stove top. It gets cooked pretty quickly even on stove top.
