Paneer Tikka Sandwich


I love trying all kinds of sandwiches. I loved this idea of using paneer tikka masala as filling, and the end product was very tasty and filling. My daughter just loved this. Best recipe to make kids excited about lunch/snack/dinner. 


This recipe uses artificially induced smoked paneer tikka masala as sandwich filling. The smokey part is induced by placing a small pot with burning charcoal (+ oil) inside the container and closing lid for some time. I skipped this part. Sandwich tasted yummy nevertheless.

Ingredients(*see notes)

Bread 

Panner - 360 gm

Bell pepper - 1/2 red 1/2 green

Onion - 1 medium

Carrot - 2 

Beans - big handful 

Cilantro 

Green chili - 1 minced


For marination

Coriander - cumin powder - 2 tsp

Roasted besan - 2 tbsp

Garam masala - 1/2 tsp 

Amchur powder - 1 tsp

Chat masala - 1 tsp

Red chili powder - 1 tsp

Turmeric 

GG paste - 1 tbsp

Curd - 1/2 cup

Butter - 1 tbsp room temperature 

Lemon juice

Oil

Salt 



Method


Marinate

Add oil in a bowl. Add everything else under “for marination” and mix well.  




Add finely chopped veggies + green chili + cilantro. Marinate for 1/2 an hour. *See Notes




In a pan, add oil + marinated mixture. Sauté till vegetables are cooked and mixture comes together. 

Let it cool. Add finely chopped paneer cubes. Mix well.  




Put generous amount of filling between two slices of bread. Apply butter and toast on both sides in medium flame. Press bread while toasting so that bread holds the filling.

Notes - 

  • I wonder why paneer was not marinated, so I marinated it the next time I made it. Tasted between “little better - all the same”. 
  • Carrot and beans were not in the original, I just added them to load more veggies in the dish. They were crunchy in the end and not entirely cooked. If you like them completely cooked - either boil them before putting it for marination or sauté them first before adding marinated stuff. You can add more veggies of your choice. 
  • The filling turned out extremely spicy. So reduce the chili portion if you like it less spicy.
  • I think adding kasoori methi would enhance the flavor. 
  • The above quantity was enough to make 12-13 sandwiches.
