Presenting one more flavorful, delicious and easy-to-make rice bath, again from oggaranne dabbi cooking show. As I say again and again, I am overwhelmed at the variations one can make in rice baths just by changing few vegetables and few ingredients here and there. Rice baths are easy to make, tasty and a definite crowd pleaser, perfect for potlucks.
This bath is low on spices, healthy and a good lunch box item. My daughter just loved it!

Rice - 2 cups - basmati
Water - 3 cups
Carrot - 3 small - grated
Spinach - 2 very big handful
Onion - 1/2 big
Tomato - 2
Surti papdi lilva/avarekaaLu(frozen) - optional
Ginger-garlic paste - 1 tsp
Red chili powder - 1/2 tsp
Garam masala - 1 tsp
Dhaniya powder - 1 tsp
Turmeric
Oil + ghee - 2 tsp
Mustard seeds
Curry leaves
Lemon juice
Cilantro
Method
Soak basmati rice for atleast 20 min and then cook for 2 whistles in a pressure cooker.
In a deep pan, add oil + ghee + mustard seeds. After it splutters add curry leaves + finely chopped onion + ginger-garlic paste. Sauté till done. Add cut tomatoes, sauté for a while. Add surti papdi lilva + grated carrot + finely chopped spinach + little salt. Cover and cook. Add all powders. Cook for few more minutes. Add salt. Add cooked rice. Let it cook for couple more minutes in low flame. Add lemon juice, cilantro(skipped).
