These days I am hooked onto Oggarane dabbi cooking show. Every day there is something new I’d like to try. I like the hosts candid opinion, which makes it easy for me to try only certain dishes and not everything. I must have tried some 6-7 dishes already and I have only been watching the show for like a month.
One of the dishes that I tried was Vegetable Pongal which was shown as pancahrangi pongal on the show. It is a wholesome one pot dish. Very healthy, very tasty and gets done in a jiffy. Easy enough to prepare on a busy working day, yet fancy enough to serve your guests at dinner parties.

Rice - a little over 1 cup - sona masoori
Moong dal - 1 cup
Water - 2 1/2 to 3 cups
Mix veg - Carrots, beans, peas, potato, capsicum
Onion - 1 medium
Tomato - 1
Ginger - garlic paste - 1 tsp
Green chillies - 2 (very mild)
Jeera
Mustard seeds
Black Pepper
Hing
Turmeric
Curry leaves
Cashews
Cilantro - to garnish
Ghee
Method
In a pressure pan add some ghee and roast moong dal in medium flame until it turns reddish brown. Take it out. Add some more oil + ghee. Add jeera, black pepper and mustard seeds. Let it splutter. Add cashews, hing, curry leaves. Add onion, sauté till translucent. Add GG paste. Add vegetables except capsicum. Add turmeric. Add tomato, capsicum. Add rice, sauté until everything is mixed well. Add water. Let it boil. Add salt to taste. Close the cooker and let it cook for 2 whistles. Let it cool. Open and fluff it with a fork. Garnish with cilantro. Serve hot.
