Kodbale is a fried snack made during festivals. My mom makes this for Ganesha chaturthi. This is my mom’s trademark recipe. It is slightly different than regular kodbale. My favorite. My daughter’s favorite too.
It is a little time consuming, and you don’t get enough quantity for the whole lot of work you put in, but the taste makes up for it.

2:1 Rice flour : Maida(all purpose flour)
Hot oil - 1 soutu(1 ladle) approximately - 1/4 cup
Salt
Oil for frying
to grind(approx)
Dalia/kadle pappu - little(2-3 tsp)
Coconut/kaayi - open palmful(1/2 cup or little less)
Cilantro
Curry leaves
Green chillies
Jeera - very little(1/2 tsp)
Method
Grind ‘to grind’ ingredients in a mixie with water to chutney consistency.
In a big mixing bowl, add rice flour, maida, salt and heated oil. Mix well with a spoon(as oil is hot). Add the ground chutney mixture. Mix well. Add water and knead it to chapathi dough consistency. Shape the dough into kodbale shapes(very tedious). Fry it in hot oil on both sides until golden brown. Let it cool down completely and store it in an air tight container. Don’t expose it to moisture.
