Sandwich is a staple in our house. My daughter loves them and I love them too. I can stuff any kind of vegetable and she wouldn’t even notice..
I generally make mixed vegetable palya with potato, carrot, beans and peas. Nothing fancy just regular potato palya with added vegetables...
Then I came across this mix veg paratha at Indian Stores which had crushed vegetables in them; which gave me an idea to crush the frozen mixed vegetables, instead of cutting all the vegetables from scratch.

I got an easy and a better tasting Playa.
I coarsely ground frozen vegetables. And when they are ground together the individual taste of each vegetable is blended together to give an unique taste in every bite.

Ingredients
Organic Frozen Mix Veg bag from Costco - couple of handfuls
Potatoes - 1 pressure cooked
Cilantro
Green Chili - 1(very mild)
Garlic - 1 pod
Garam Masala - 1/2 tsp
Method
Pressure cook potatoes. Let it cool. Peal the skin and crush them with your hands. For parathas, crush finely.
Thaw the frozen vegetables for a little while.
In a mixie, pulse frozen vegetables, garlic, green chilli, cilantro coarsely. Make sure it doesn’t become a paste.
In a pot, add oil. After it heats up add the ground mixture. Saute till the raw smell is gone. Alternately, you can sauté the vegetables first till all the moisture is gone, and then grind them with other ingredients in the mixie. Add crushed potatoes. Add Garam Masala, salt, lemon juice(optional). Mix well.
This is the basic masala I make.
You can add onions, jeera powder, coriander powder or kitchen king masala, anything you have handy to alter the flavor a little bit.
For Bread Sandwich - put a piece of bread on a grill/panini maker/sandwich maker. Put green chutney/sweet chutney/garlic chutney if you have. I generally don't put any chutney. Put the stuffing. Cover it with another slice of bread. Toast on both sides.
