Presenting another extremely flavorful sabji/ curry made from bottle gourd. Everyone in my family just loved this. It goes really well with chapathi. Cooking procedure is similar to baingan barta. And it gets done quickly too.

Ingredients
Bottle gourd/ Sorekayi/ Lauki - 2 medium
Onion - 1
Tomato - 2
Peas - handful
Cilantro
Oil
Jeera
Ginger - 1 tsp
Garlic - 1 tsp
Green chili - 3-4 finely chopped
Turmeric
Red chili powder - 1 tsp
Coriander powder - 2 tsp
Garam masala - 1 tsp
Sugar - 1/2 tsp
Method
Peel and chop bottle gourd in big chunks. If you are making chutney out of peels, you can take out the middle part (seeds) as well before chopping. Otherwise you can leave it. Add sufficient water and cover and cook until bottle gourd is completely cooked. I just pressure cooked it for 1 whistle. Drain water and mash the pulp nicely(I didn’t mash it thoroughly).
In a deep pan, add oil. Add finely chopped ginger-garlic(I used paste), then green chili and then onion. Sauté till onion turns translucent. Add tomatoes and peas. Cover and cook till tomatoes become completely soft. Add red chili powder, coriander powder, turmeric and salt. Add mashed bottle gourd. Cover and cook for 10 mins. Add garam masala and sugar. Mix well. Add cilantro and mix well. Serve hot with chapathi.
