Veg Chow Mein

 Summer holidays is going on in full swing and my teen seems always hungry for something special(read: junk food). 


Veg Chow mein, I would say is a good mix of healthy and kid friendly. In the sense, you can add as many vegetables as you want and kids don’t seem to mind because it’s noodles. This recipe I got from a YouTube video(link given below). 

I generally substitute noodles with spaghetti.

Ingredients

Noodles - 2 packs

Water - for cooking noodles 

Oil - as needed


Onion - 2 medium

Green bell pepper - 1

Red bell pepper - 1

Cabbage - 1/2 

I also add carrot, celery, beans, etc.


Garlic - 5-6

Green chillies - 2-3

Ginger - I inch


Sauce 

Vinegar - 1 tbsp

Red chili sauce - 1 tsp(dirty)

Green chili sauce - 1 tsp(dirty)

Soya sauce - 1 tsp - dark

Powdered sugar - 1/2 tsp


Powders

Garam masala - 1/2 tsp

Red chili powder - 1/2 tsp(for color)

Salt - little 


Green onions - garnishing


Method

Cook noodles according to the instructions on the back of the packet. Traditionally, you are supposed to cook them, strain them and run in cold water, add couple of tsp of oil and mix well. But, I time cooking noodles in such a way that they get ready when masala gets ready, and then I strain the noodles and put them directly to the wok with sautéed veggies.



In a wok/ deep pan, add 2 tbsp oil. When it gets hot, add onions, then ginger, garlic, green chili, sauté for a minutes, then add the peppers and cabbage[save some veggies for last]. Sauté on high heat just for 1 min. Make sure veggies are all al dente. Add cooked noodles. Mix well. Add powders, sauce, toss well. Off the stove. Garnish with green onions. (Tip from the chef)Now add the saved raw veggies - this compensates for lack of crunch obtained from high power burners in the restaurants. 

Mix well.
