Gulkand Barfi

 Happy Deepavali!!


Presenting an easy peasy barfi recipe which can be done in no time and tastes like store bought ones. I clearly need to work more on how they look :)


It doesn’t need any major prep work other than buying ingredients and it must’ve taken me like 15 min from start to finish. 


I saw this recipe on Oggarane dabbi cooking show long time back. It needs 3 main ingredients - Khoa, Sugar and Gulkand. The original recipe uses sweetened khoa, but since it was not available here, I added powdered sugar.

Ingredients(makes about 20 barfis)


Khoa - 1 block(12oz/ 341 gm)

Sugar - 1/4 cup - powder in a mixie - not needed if using sweet khoa

Gulkand - around 3-4 tbsp

Cardamom powder - a big pinch

Ghee - 1 tsp and little extra to smear on plate


Method

Cut khoa into small cubes. Add this to a pot, preferably non stick(Thanks Bindu for this tip!). Add powdered sugar. Heat it in sim till khoa becomes soft. Now add gulkand and mix well. 


In the original recipe, they mix gulkand with water first and then squeeze out gulkand before adding it to barfi. I don’t remember why they did that. I am guessing since they use sweetened khoa this procedure was followed to take out extra sweetness from gulkand. 


But I added gulkand as it is. The sweetness was just right. 


After adding gulkand, mix it in sim till mixture comes to halwa consistency. Add a tsp of ghee, add cardamom powder, mix well and off the stove. 





Transfer this to a plate smeared with ghee. Cut it in barfi shape. Let it cool completely. I left it overnight. Enjoy!
