Veg Burrito Bowl


My husband loves chipotle burrito bowls. Burrito bowls are easy to prepare at home. If you are hosting a party, you can prepare all the side dishes in advance and still have time to dress up and look fresh :) You can easily feed a crowd. Taste bhi health bhi kinda dish.

Ingredients and Method

Black beans and brown rice
I used dry black beans. Soak it in water overnight. In a pressure cooker take 2 pots(pot in pot). In one pot add beans with some salt. Add little water just enough for it to cook well but not become mushy. 
In the second pot take brown rice + add 1:2 water and some oil/butter. 
Close the lid and cook for 3-4 whistles.  

In a pot add some oil + finely chopped garlic + cooked beans + oregano + red chili flakes. Sauté till done. 
Alternatively you can use canned black beans and skip soaking and pressure cooking part for the beans. Vegetarians keep in mind that some canned beans can have lard in them.  

In a bowl take cooked brown rice + cilantro + lemon juice + salt. Mix well. 

Guacamole and Salsa
Avocado
Tomato
Onion
Salt, pepper, red chili flakes. 
Cilantro
Lemon juice

Crush avocado pulp in a bowl, add lemon juice(to retain the color), add chopped onion and tomato. Add salt, pepper and red chili flakes(or finely chopped jalapeños/ green chillies). You can also add cilantro. 

Salsa/ pico

In a bowl add finely chopped onion + finely chopped tomato and finely chopped cilantro + salt + pepper + red chili flakes + lemon juice. Mix. 

Vegetables
Onion
Bell pepper - Red/yellow/green 

In a pot add oil + finely chopped garlic + add onion + bell peppers + red chili flakes + salt and pepper. Sauté till done. 

Sour cream
Add salt and lemon juice and mix

Lettuce and black olives 

Taco bowl -
I got taco bowl molds from amazon and used organic uncooked tortillas(5 ingredients no preservatives) from Costco, and baked them in the oven for 15 min. Before baking pierce tortillas all around with a fork. Otherwise they tend to puff up. 

Putting it together -
Take the bowl, add all the stuff one by one from the side. Finally top it with a big dollop of sour cream and add some shredded cheese.
