Ladies….… hold on! This one is too good to pass.
Imagine you are traveling away from home and want to prep something that your husband can easily cook, or you come back from work or in general are too tired/ bored to cook anything, or you want to send something with your kids when they are going away for college.. you can make sambar in matter of minutes! yes, it is possible with this Instant sambar mix. All you have to do is boil some vegetables and add this mix, sambar is ready! So easy! Keep this mix handy in your pantry and you can whip up a simple lunch/dinner in no time. Do try!
Toor dal - 1 and 1/2 cup
Chana Dal - 1/2 cup
Moong dal - 1/2 cup
Urad dal - 2 tbsp(1/4 cup)
Fry these together. No oil. Till golden brown.
Dhaniya - 3/4 cup
Red chilies - 30
Mustard seeds - 2 tbsp
Jeera - 2 tbsp
Peppercorns - 1 tbsp
Curry leaves - 2 stalks or more
Tamarind (*see below)
Roast these separately.
Let everything cool down and dry grind in a mixie.
*Original recipe uses tamarind in the mix too, since I didn’t have dry tamarind, I didn’t use it. I used tamarind juice later.
To make sambar - cook vegetables with less water. Mix a tbsp or two of instant sambar mix with water + tamarind extract(if it’s not already in the mix). This mixture should be runny at this point. Add this to the cooked vegetables and bring to a boil. Sambar will thicken as it boils. Make tadka and add it to the sambar.

Notes -
- Indian stores carries a frozen sambar vegetables bag.
- To make things even more easy, roast and dry grind the dals(and tamarind) and mix it with any sambar powder of your liking.
- The above quantity made 24 oz glass container and then half, sambar mix.
