Presenting extremely easy to make appetizer - corn pakodas. I got this recipe from a cooking show. It was prepared in under 5 min, or that’s what it was shown as.. It took me close to 15 - 20 minutes. Fresh corn works best, I used frozen corn. Anyways, I added some mint and cilantro, which was not in the original, and because of that it tasted more like falafel. Perfect appetizer to take for potlucks and parties. Do try!
Corn - approximately 2 cups
Coconut - 2-3 tsp
Green chili - 3
GG paste - 1 tsp
Mint and cilantro - not in the original
Gram flour - 4 tsp
Rice flour - 8 tsp
Corn flour - 6 tsp
Salt
Oil for frying
Method
In a mixie, add corn, coconut, green chili, gg paste, mint and cilantro(if adding any) and grind to a coarse paste without adding any water.
Take it out in a bowl. Add the flours and salt according to taste. Mix nicely. Add more in the same proportion, if needed.
Keep oil for frying. Wet your hands, make balls out of the dough. Fry nicely till golden brown. Serve hot with ketchup/ green chutney and coffee.

Notes -
- Instead of shaping it like a ball, randomly frying like pakodas gave it more crunch.
- Since corn has a tendency to pop in high temperatures, I would be extra careful in making sure that every kernel is crushed in the mixie.
- Fresh corn kernels works best, but if you are using frozen one, make sure it is completely thawed.
