This year I want to start off with something healthy. I got this recipe (again) from Oggarane Dabbi cooking show. Nellikayi is supposed to be very healthy. Most Ayurvedic lehas(that I know of) have nellikayi in them.
Nellikayi has an astringent taste. I tried many recipes with nellikayi recently. Out of all the recipes, this recipe stands out. This recipe is a good way of including nellikayi in your diet.

Nellikayi(Amla) - grated - handful - (I used 4-5 - frozen)
Rice
Peas
Jaggery - little
to grind
Chana dal/ kadle bele - 1 tsp
Urad dal/ Uddina bele - 1 tsp
Coriander seeds/ Dhaniya - 1 tsp
Guntur chili - 3
Byaadagi chili(menasinakayi) - 4
Methi seeds/ Mente - 1/2 tsp
Mustard seeds/ saasive - 1/4 tsp
Jeera/ jeerige - 1 tsp
Peppercorns/ menasina kaaLu - 1/2 tsp
Curry leaves/ karibevu soppu - 10-15
Tadka
Jeera
Mustard seeds
Green chili - 1 to 2
Hing
Peanuts
Curry leaves
Turmeric
Method
Cook rice.
Dry roast ‘to grind’ ingredients one by one. Then dry grind to a powder in a mixie, without adding any water. Add grated nellikayi to this and pulse-grind couple of rounds.
In a deep pan make tadka. Start with oil. Add jeera + mustard seeds. Let it splutter. Add peanuts. Let it roast. Add slit green chilies + hing + turmeric + curry leaves + peas(frozen)* + jaggery + ground mixture(as much as needed). Roast till done. Add cooked rice and mix well. Enjoy!

Notes -
- If using fresh peas, boil and cook first.
- This mixture stays for 1 month.
- If making for kids reduce the chilies.
