Presenting another appetizer which is easy to make, unbelievably tasty and kid friendly. Palya bread/ masala bread/ bread sandwich are some of the names it goes by in local bakeries in Bangalore.
I found this recipe looooong time back in one of the first blogs I stumbled upon.. it had very basic and handy ingredients. Over the years I have seen many variations with more ingredients, but I find this recipe simple and good enough. Do try!
Bread
for the palya/masala
Carrot - 3 - grated
Onion - 1 big - finely chopped
Tomato - 2 medium, firm ones - finely chopped
Green chilies - 2 - very finely chopped
Cilantro - handful - finely chopped
Turmeric - 1/2 tsp
Salt
for tadka
Oil
Mustard seeds
Jeera
Curry leaves - finely chopped
Method
In a deep pan, make tadka - add oil, add mustard seeds and jeera. After mustard splutters, add green chilies, curry leaves, add onion, fry till translucent. Add tomatoes. Do not add pulp if it’s too watery. Add grated carrot, turmeric powder, salt. Fry in medium flame until carrot is cooked and moisture is gone. Oil should ooze out. Add cilantro, let it fry for couple more minutes.
Toast bread adding oil/ghee/butter on both sides. Take a teaspoon(or more) of the masala and spread on one side. Let it rest for some time. For potlucks you can cut this bread in strips or four squares. Enjoy!
