This recipe is similar to the last recipe. Almost same recipe, just change in vegetable, gives you a very different tasting rice bath. It is very easy to make and a good option for lunch box.
It tastes like palak paneer mixed with rice and kids will love it. I felt addition of potatoes or fried paneer would’ve gone well with the taste.

Rice - 1 cup
Onion - 1 medium
Jeera - 1 tsp
Bay leaf
Cinnamon - 1/2 inch
Cloves - 3 - 4
Cardamom - 2
Mace - 1 strand
Star anise - 1
Lemon juice
to grind
Spinach - 1/2 lb
Cilantro - small bunch - not in the original recipe
Green chillies - 2
Ginger - a small piece
Garlic - 3
Method
Prepare spinach puree
In a pan add ‘to grind’ ingredients. Saute for few minutes. Allow it to cool and grind to a fine paste.
Cook rice with bay leaf(Basmathi 1:1 and 1/2 water; Sona Masoori 1: 2 water). Check notes. Let it cool down a little bit.
In a deep pan, add oil. Add jeera + cinnamon + clove + cardamom + mace + star anise.
Add onion, sauté till translucent. Add spinach puree. Sauté till oil separates. Mix rice. Add lemon juice and mix well. Enjoy with some raita.

Notes -
- Original recipe asks to cook everything together. As usual, I cooked the rice separately and then mixed with the masala.
- I think adding paneer or potato will enhance the flavor
