Sometimes tasty dishes don’t need lot of masala. Simpler versions are better. I used to do mix veg saagu with lot of spices like coriander, jeera etc. I always found the masala to be overwhelming, but still continued as that was the only way I knew. Many mix-veg saagu recipes out there are also similar to what I do.. When I was browsing for a different version of mix veg saagu, I came across this recipe which looked much simpler on the masala. The taste came out good too. It’s also richer as it has cashews.

Mixed Vegetables - Mix and match - Carrot, Beans, Potatoes, Chayote(Seemebadnekayi), Peas, Cauliflower, Capsicum - all chopped into big pieces.
Onion - 1/2 (I skipped this)
to grind
Coconut - 2 tbsp
Dalia/kadle pappu - 2 tsp
Onion - 1/4
Green chillies - 2(medium spicy)
Cashews - around 10 (soaked in warm water for 10 min)
Cinnamon - 2 inch piece
Cloves - 5
Black pepper - 4
Ginger - 2 inch peice
Cilantro - few
for the tadka
Mustard seeds
Curry leaves
Hing
Turmeric
Method
Soak cashews is warm water for 10 min or cold water for 30 min.
Cover the vegetables in water, add some salt and cook till they are done.
How to cook mix veg -
Start with hard vegetables like carrot, beans and potatoes. After they are half done, add seembadnekayi, peas. Then cauliflower(almost end).
While the vegetables are cooking grind “to-grind” ingredients. Once the vegetables are done, add the ground mixture and bring it to a boil. Add water to the desired thickness. Remember the curry thickens once it cools down. Adjust the salt.
In a separate pan make tadka. Heat oil, add mustard seeds, hing. Once it starts to splutter add curry leaves and turmeric. Add chopped onion(if adding any) and sauté till translucent. Add this to the saagu.
Serve hot with chapathi, poori, set dosa.
