Navratan Kurma


Navaratan Kurma is a rich, popular North Indian curry. I like the rich, creamy, sweet taste of this curry. But this particular recipe tasted more like Thai red curry.. may be because I didn’t use any sweet-giving ingredients, such as pineapple/raisins, as I didn’t have any..

Ingredients

Mixed vegetables - Carrot, Beans, Peas, Cauliflower, Capsicum, Potatoes
Chopped Onion - 1 medium
Tomato - 1 big
Pineapple chunks - 1/4 cup
Raisins - 2 tsp

Garlic - 3 pods
Green chili - 1

Spices
Jeera - 1/2 tsp
Cloves - 4
Cinnamon - 2 inch
Cardamom - 3
Bay Leaf - 1

Powders
Turmeric
Chili Powder - 1/4 tsp
Coriander Powder - 1 tsp
Garam Masala - 1/2 tsp

Milk - 1/2 cup
Yoghurt - 1/4 cup

Salt
Oil/butter - 2 tbsp
Coriander leaves

to grind
Cashews/Almonds(peel skin after soaking) soaked in warm water for 15 min
Coconut - 2 tbsp

Method

Heat oil/butter in a pan. Add spices. Add onions, garlic and green chili. After they are translucent, add tomatoes. Add vegetables except capsicum and all the powders. Add some water and cover and cook till it’s almost done. Add capsicum and boil for couple more minutes till it’s done. Add milk, yoghurt, ground paste, pineapple, raisins and cook for 5 more minutes.  Garnish with coriander leaves .
