Easy Cauliflower Curry

Okay, I’m out of my cooking slump. I must’ve tried at least 10 new dishes in the last month. All came out well. Hopefully this cooking “josh” continues. 

I came across this recipe online and was very impressed with the simplicity of this dish. It tastes good and can be made in no time at all, well almost. It goes well with rice and chapathi.

Ingredients

Cauliflower - 1 whole
Onion - 3 small or 1 big
Tomatoes - 3 small

Shredded coconut - 3 tbsp
Fennel seeds - 1 tsp
Green chillies - 2

Ginger-garlic paste - 1 tbsp
Red chilli powder - 1 tsp(original uses 1 tbsp)
Garam masala - 1 tsp 
Turmeric powder 

Oil 
Curry leaves
Coriander leaves - a bunch 

Method
Heat oil in a pan. Add chopped onion. Fry till translucent. Add GG paste, green chillies, and curry leaves. Add chopped tomatoes, red chili powder, garam masala, salt and turmeric. Sauté for sometime and add chopped cauliflower. Cover and cook for 5 min. Grind coconut and fennel seeds. Add this to the cauliflower mixture. Add water and bring it to a gravy consistency. Cover and cook till cauliflower is done. Add coriander leaves and turn off the stove. 

Lunch box: Cauliflower curry with some pulav
