Easy Mango Custard

Aah.. Welcome Spring! Days are longer, weather is warming up, summer is almost right around the corner, mangoes are going to be there.. :) Not that this recipe needs any fresh mangoes, canned mangoes does the job and it is available all year round. But yeah, fresh mango pulp will definitely make a difference.


This is a super easy recipe, which tastes really good. Perfect for dinner parties and potlucks. Make this for your next party and impress your friends and family. Don’t count the calories :)

Ingredients(all measurements are approximate)
Mango pulp - 1 cup(or more) - I used canned pulp
Heavy whipping cream - small box
Sugar - according to taste - skip if adding custard 

Custard (optional)
Custard powder - 2 tbsp
Milk - around 2 cups
Sugar - 1/4 cup

Fruits of your choice - apple, banana, grapes, pears

Garnishing
Roasted cashews
Tutti frutti

Method
Prepare custard - Take milk in a pot. Bring it to almost boil. Meanwhile in a small bowl mix custard powder with little milk. Mix properly without any lumps. 
Add it to the milk. Add sugar. Bring the whole mixture to a boil in simmer. Adjust sugar if necessary. The milk thickens as it boils. If it doesn’t, then mix some more custard and add it to the milk. If it is too thick, add more milk. Turn of the stove and let it come to the room temperature. 

In a mixing bowl, add heavy whipping cream and whip it till you get soft peaks. Fold in the mango pulp. If using fresh mango pulp add some powdered sugar. Add in the custard(If you are not using custard add some powdered sugar at this point). Mix well and keep it in the fridge for at least couple of hours. 
Before serving add cut fruits and garnish with some fried cashews and some tutti frutti.
