Mango CheeseCake


Sometime back I saw this video on Euphoric Delights(a FB group) about this easy dessert made for a potluck. The picture and presentation was so enticing that I couldn’t wait to have one for myself. Then I started looking out for the ‘setting’ ingredient agar agar(as a substitute for Gelatin) in local stores, only to realize that it’s not easily available. After months of searching, I found one in an Indian store and finally got to making it..


This recipe is very easy once you get the hang of it. It is also a good potluck item. It looks very fancy and classy served in individual portions, in clear shot glasses.

Ingredients*(chk notes below)

Cream cheese - 5 oz (10 oz)
Sugar - 1/4 cup (little less than 1/2 cup)
Heavy whipping cream - 1/4 cup (1/2 cup)
Water - 1/2 cup (1 cup)
Agar agar powder - 1 tsp (strands - 3 tbsp - could’ve used little more)
Mango pulp - 1 cup (2 cups)

Graham Crackers - 5 (could have used 5 more)
Butter - couple of tsp, just enough to moisten the crust



Method

Layer 1 :
Crush the graham crackers in a mixie and later mix it with melted butter. Put 2-3 tsp in each serving glass, tap it, press it tight to the bottom of the glass and keep it in the fridge for at least 10 min.

In a pot take agar agar and water. Boil it in medium flame until all the agar agar is dissolved. Set aside for cooling(it should become warm - not too cool). 

In a mixing bowl, take cream cheese, heavy whipping cream and sugar. Whip it with a whisk(or use electronic mixer if you have one), till everything is nicely incorporated. 

Mix mango pulp with the agar agar solution. Take half of this mixture and mix with the whipped cream cheese mixture. Keep aside the remaining mango pulp-agar agar for the third layer.

Layer 2:
Take the serving glass. Add 3 -4 tsp of cheese-cream mixture. Tap to let out any air bubbles. Refrigerate again for 10 min(I skipped this, as my cream cheese was pretty thick and I was sure it wouldn’t mix with the next layer). 

Layer 3:
After 10 min, put 2-3 tsp mango - agar agar mixture.

Refrigerate for at least 6 hrs before serving.

Notes :
  • The measurements in brackets made about 10 servings in 5 oz cups
  • It took me around 45 min from start to finish to make this(including prep work and cleaning) - not bad! 
  • use an aluminum tray to transport batches of serving glasses in and out of the fridge.
