Dabeli

Dabeli is a popular street food. It is basically spicy potato mix placed in-between pav bread..  



This recipe is from Manjula’s kitchen.  I was really intrigued by the way the dabeli stuffing was cooked. Basically the potato is boiled and cooked in water along with dabeli masala, so that it comes to a paste consistency! Never knew potato could do that. This spicy potato paste is then placed in between roasted pav bread smeared with green/garlic and sweet chutney, and then topped with some sweet(pomegranate seeds) and spicy sev... yum yum..

Ingredients

Pav Bread/Potato Rolls/Buns
Green Chutney/Garlic Chutney - I used store bought green chutney
Sweet Chutney(optional) or Tomato ketchup
Fine Sev - store bought
Pomegranate/finely chopped grapes (optional - I skipped this as I didn’t have any)
Roasted and crushed peanuts (I put this in the masala itself)
Oil 
Butter

Dabeli Spice mix(makes 1 tblsp)
Red chili - 1 (or more if you like it spicy)
Coriander Seeds - 1 tsp
Cloves - 2 
Cinnamon - 1/2 inch
Cumin seeds - 1/2 tsp
Black pepper - 4

Potato Filling
Potato - 2 big boiled and mashed
Cumin Seeds - 1/2 tsp
Dabeli Spice mix - 1 tblsp (you could use the store bought one too, instead of the above masala)
Tamarid Paste - 1 tblsp
Salt
Sugar - 3 tsp
Water - around 1/2 cup

Method

Dry roast all the Dabeli Spice Mix masala in a pan on medium heat, till it leaves a nice aroma. Let it cool and then grind it to a fine powder. 

In a pan, heat oil. Add cumin, let it crackle. Add halved peanuts and roast them on medium flame(Original recipe adds crushed peanuts in the end). Add cooked and mashed potatoes, dabeli spice mix, salt, sugar and tamarind paste. 

Add water, at this stage the mixture is very watery. 


Cook till it comes to a paste consistency. 


In a tava, toast pav bread with butter. Put two kinds of chutneys on each side(sweet/tomato ketchup and green/garlic chutney), or one. Original recipe uses only green chutney. Add considerable amount of filling on one side. 
Top it with pomegranate, crushed peanuts, and sev. Close the other bun.
