I am a sucker for noodles. Especially Indo-chinese versions. It is a delight to eat hot spicy noodles on cold rainy days. My daughter loves them too(somehow, all kids do). So much so that she doesn’t mind eating vegetables in them!! I couldn’t believe my ears when she said “I love vegetables” while eating them! Which mother wouldn’t like to hear those words, right?! how I wish all dishes were this kid friendly...
It is called Malaysian Veg Noodles. I don't know what makes it Malaysian..
Hakka Noodles(I used angel hair pasta - 1 packet)
Vegetables - Carrot, Beans, Peas
Tomato - 2 small(or more)
Tomato paste - 1 tsp(optional - not in the original recipe)
Chili powder - as much as you want - I added about 1/2 tsp(very very mild)
Garlic - 1 pod(or according to taste)
Brown Sugar(optional - not in the original recipe)
Prepare the noodles as per the instructions. Cook them al-dente. Add oil and mix well to keep the strands separate. Grind tomatoes, chili powder, garlic, tomato paste together.
In a pan add oil. After it is hot, add onions and fry till translucent. Add vegetables. Cook them al-dente. Add brown sugar. Add ground paste.
After it is cooked, add noodles and mix well.
